Spain is one of the world’s great cheese and wine-producing nations, so it’s no surprise the two make exceptional partners. From the rolling vineyards of Rioja to the sheep farms of La Mancha, many of Spain’s most celebrated cheeses have evolved alongside the wines produced in the very same regions.
To help you build the perfect Spanish cheeseboard, we’ve paired some of our favourite Spanish cheeses with wines that complement their unique flavours and textures. Some are traditional regional matches, while others simply create an unforgettable combination on the palate.
Manchego DOP & Rjoja
Arguably Spain’s most famous cheese, Manchego DOP is made exclusively from the milk of Manchega sheep in the La Mancha region. Depending on its age, it ranges from buttery and mellow to rich, nutty and slightly caramelised, making it an incredibly versatile cheeseboard favourite.
The classic pairing is a Rioja Reserva or Tempranillo, whose ripe red fruit, subtle oak and gentle tannins complement Manchego’s nutty character beautifully without overpowering it. If you prefer white wine, an aged Verdejo also works wonderfully, its freshness balancing the richness of the cheese.
Monte Enebro & Albariño
Monte Enebro is one of Spain’s most celebrated goat’s cheeses. Its distinctive ash-coated rind surrounds a creamy paste with bright citrus notes, gentle acidity and an earthy complexity that develops as it matures.
A crisp Albariño is an excellent match, bringing vibrant citrus and mineral notes that enhance the cheese’s freshness. Alternatively, a dry Sauvignon Blanc offers enough acidity to cut through the creaminess while allowing the delicate goat’s milk flavours to shine.
Canarejal & Cava
Canarejal is an indulgently creamy sheep’s milk cheese designed to be enjoyed with a spoon once perfectly ripe. Rich, buttery and luxurious, it’s a real centrepiece for any cheeseboard.
To balance its richness, pair it with a lightly oaked Chardonnay or a crisp Cava. The refreshing acidity and fine bubbles cleanse the palate between each mouthful, making every bite feel as decadent as the first.
Santa Gadea & GodelloÂ
Made from goat’s milk, Santa Gadea has a fresh, clean flavour with subtle tangy notes and a smooth, creamy texture. It’s delicate enough to enjoy on its own but also pairs beautifully with lighter wines.
A chilled Albariño or Godello is an ideal companion, bringing lively citrus fruit and mineral freshness that complements rather than competes with the cheese’s subtle character.
Picos de Europa & Sherry
Produced in the Picos de Europa mountains, this striking blue cheese is rich, salty and wonderfully bold. Its creamy texture and punchy flavour call for a wine that can stand up to its intensity.
Try pairing it with a Pedro Ximénez Sherry or another sweet fortified wine. The sweetness balances the salty, savoury character of the blue cheese, creating one of the most satisfying cheese and wine pairings you’ll find.
