The name for Pave Cobble is inspired by cheese-maker Roger Longman’s keen love of cycling and is an homage to the difficult and famous cobbled cycling stages of races such as the Paris Roubaix. However it’s an ironic name because it’s one of the smoothest and sweetest ewe’s milk cheeses we’ve ever tasted. The gorgeous creamy slightly citrus flavour and pyramid shape of Pave Cobble work so well together its no surprise its already won British Cheese Awards Supreme Champion 2017.
