Blue Cheese Apple Crumble
Ingredients
For the fruit filling
- 5–6 medium apples or pears
- 100g granulated sugar
- 2 tbsp plain flour
- 1 tbsp ground cinnamon
- ¼ tsp salt
- ⅛ tsp freshly ground black pepper
- 2 tbsp bourbon
- 1 tbsp vanilla extract
- 1 tbsp fresh lemon juice
For the blue cheese crumble
- 140g light brown sugar
- 40g rolled oats
- 57g pecans
- 4 tbsp unsalted butter, chilled and cubed
- 50g crumbled Roquefort cheese
How to make it
A comforting blue cheese apple crumble. Sweet apples, warming cinnamon and a splash of bourbon are topped with a crunchy oat and pecan crumble enriched with blue cheese. The cheese brings just enough salty richness to balance the sweetness of the fruit without overpowering this classic dessert. The recipe also works beautifully with pears.
- Preheat the oven to 180°C / 160°C fan / Gas Mark 4
- Core the apples or pears, remove the seeds and chop the fruit into small, roughly even pieces
- In a large mixing bowl, combine the granulated sugar, flour, cinnamon, salt and black pepper. Add the bourbon, vanilla and lemon juice and stir together
- Add the chopped fruit and toss thoroughly until evenly coated in the spiced mixture.
- Transfer to a deep baking dish or pie dish and spread into an even layer
- To make the crumble topping, place the brown sugar, rolled oats, pecans, chilled butter and crumbled Roquefort blue cheese into a food processor.
- Pulse briefly until the ingredients come together into a coarse crumb. Take care not to over-process the mixture, as you want to retain that classic crumbly texture
- Scatter the Roquefort blue cheese crumble evenly over the fruit
- Bake for approximately 45 minutes, until the fruit is tender and bubbling and the topping is crisp and golden brown
- Allow to cool slightly before serving. Enjoy warm on its own or with your favourite accompaniment
