This "Girolle" is a cheese scraper or 'curler', traditionally used with Tete de Moine, to create perfect cheese rosettes.
Place your cheese on the center of the wooden platform over a steel rod to keep it in place. You can then turn the sharp blade to scrape off the top layer of Tete de Moine and form the rosettes, beautiful little curly cues of cheese. The rosettes are great eaten as part of a cheese board or you can use them as a garnish for salads.
