Comte AOC
Comte AOC, sometimes known as Gruyere de Comte, is made in the Jura from milk produced by the same cows that produce the milk for Vacherin Mont D’Or once the summer has ended.
Comte was created because the shepherds of the Jura would spend so long up in the mountains in their huts that they needed a hard cheese that would mature slowly throughout their stay away from the town.

I ate this at a friends house, so maybe he had stored it incorrectly or something, because it was a little bland and I was disappointed withe the lack of taste.

it’s impossible to know the taste that this cheese will have if you do not specify how long it has been matured: 6 month and it will taste bland and soft, 24 months and it will be salty and strong. Price is a function of this. PLease add this crucial information …

Beautifully nutty with a tang and saltiness. Also some buttery notes to it. Lovely grated into pasta.

In total agreement with CL12! By not listing the ages of this cheese the discerning customer will infer it is a cheaper and younger, likely 6month matured, product.
Any fromagerie selling this cheese is usually proud to label the age when over 18months!
