Bresaola is a cured beef that comes from the Valtellina area of northern Italy, normally served as an antipasti. This recipe uses it to create little goat’s cheese parcels that work as a party canapé or just a tasty snack.
The combination of salty bacon, sweet date and savoury goat’s or sheep’s milk cheese make these cheese wrapped dates totally scrumptious.
Earthy beetroot works perfectly with creamy goat’s cheese for this dish. It could be an impressive starter, or fancy lunch. We recommend adding a kick of addictive, fiery and sticky-sweet Tracklements Fresh Chilli Jam.
Delicate and creamy Perail cheese, paired with sweet caramelised red onion. This is a simply wonderful flavour combination and perfect on toast for a snack or light supper.
Sheep’s cheese works well as a filler in these butterflied chicken breasts. Serve with steamed veg and crushed new potatoes for a wonderful weekday dinner.
