Gorgonzola Dolce DOP
The most sexy and silky cheese in the world. This is the creamier and sweeter version of Gorgonzola, in Italy it’s known as ‘Stracchio’ from the Italian for ‘tired’ which is what the cows are from being milked in the course of their huge autumn and spring walks to and from seasonal pastures. The cows rest in the Lombardy town of Gorgonzola, resulting in Gorgonzola being flush with milk twice a year, historically the excess was used to make cheese.

Not easy to keep it under control as soft creaminess tends to ooze off the plate. But when captured what an intense but yet sweet reward. Where have you been all my cheese loving life. What a discovery.
