Baked Tunworth Studded With Garlic, Rosemary and Cranberries
Ingredients
1 × 200g round of Tunworth cheese
1 sprig fresh rosemary
A handful of cranberries
1 small garlic clove
1 fresh red chilli
2 shelled walnuts

Baked Tunworth Studded with Garlic, Rosemary and Cranberries is the perfect centrepiece for any cheese lover’s table. This indulgent British soft cheese transforms in the oven into a rich, gooey delight, with fragrant garlic and rosemary. Simple to prepare yet impressive to serve, this recipe is ideal for dinner parties, Christmas gatherings, or a cosy night in.
- Preheat your oven to 180°C / 350°F / gas 4.
- Cut the top rind off the cheese, leaving a 1 cm rim around the edge.
- Poke in the rosemary sprig and cranberries into the cheese. Thinly slice the garlic and chilli then insert them into the cheese too.
- Roughly chop or crush the walnuts and fill in any gaps on top of the cheese with them. Drizzle about 1 teaspoon of olive oil over the top.
- Place a round of greaseproof paper in the bottom of the cheese box to catch any cheese that melts and drips.
- Put the cheese on top, then finally bake with the lid off for around 15 minutes until it’s beautifully gooey and melted inside.
- Serve immediately with toasted sourdough or crunchy crudités for dipping.
