Fig and Monte Enebro Cheese Crostinis

Ingredients
½ French baguette, sliced
225g Monte Enebro cheese (softened)
4 fresh figs, sliced
2 Tbsp Tracklements Fig Relish
2 Tbsp honey
2 tsp fresh thyme leaves
Freshly cracked black pepper
How to make it
Fig and Monte Enebro Cheese Crostinis are a simple yet elegant appetiser that balance sweet and savoury flavours beautifully. The creamy, tangy Spanish goat’s cheese pairs perfectly with the natural sweetness of ripe figs, all served on crisp toasted bread.
- Preheat the grill. Arrange baguette slices on a baking sheet and grill for about 5 minutes, until lightly golden.
- Spread the softened Monte Enebro over each crostini. (Tip: warm it very slightly if needed to make spreading easier.)
- Add a small spoonful of Tracklements Fig Relish to each slice, then top with the fresh fig slices. Drizzle with honey.
- Season with black pepper and scatter thyme leaves over the top.
- Return to the grill for 2–3 minutes, until the honey bubbles and the bread edges crisp.
- Serve your showstopping fig and cheese crostini’s warm as an appetiser or with drinks.
