19 February 2023 — Lunch, Party, Snack

Welsh Rarebit

Ingredients

(Serves 4)

225g (8oz) Celtic Promise
30g (1oz) butter
1 tsp english mustard
1 egg, beaten
salt and pepper
4 slices of farmhouse bread, lightly toasted
a few drops Tabasco or Worcestershire sauce

How to make it

Hot cheese sauce served over slices of toasted bread, what’s not to like with Welsh Rarebit? Celtic Promise offers a rich full flavour to boot. Celtic Promise is a mystical name and it must, we think, have been crafted by fairies and elves in the forests of West Wales because this is a truly magical cheese!

  • Heat the oven to 220C (200 in a fan oven).
  • Toast the bread
  • Grate  the Celtic Promise
  • Add to a mix of the English mustard, egg and tabasco
  • Season with salt and pepper
  • Butter the bread
  • Spread onto buttered toast
  • Pop in the oven for 5 – 10 mins until browned and gorgeous

Welsh Rarebit is great for lunch, or you could use small chunks of bread and serve as canapes!
