Cheddar No. 1 Souffles

Cheese souffle

Ingredients

Serves 6

1 small onion, cut into wedges

275ml milk

bay leaf

40g butter

40g plain flour

150g cheddar No. 1

1tsp English mustard

Grated nutmeg

3 large eggs

How to make it

Creamy, crunchy and mature cheddar No.1 from Alex James Co. makes these souffles incredibly delicious. Ideal for starters or dinner parties for when you want the wow factor.

  • Preheat oven to 200°C/ 180°C fan/ gas mark 6
  • Grease 6 ramekins and put to one side
  • Heat the milk in a pan and add the bay leaf and onion wedges
  • Simmer on a low heat for 5 minutes
  • Pour through a sieve and leave to one side
  • In a saucepan melt the butter
  • Stir in the flour until you’ve made a roux
  • Slowly add the milk, mixing into the roux until you have a smooth and thick sauce
  • Add the mustard and nutmeg
  • Add the cheddar No. 1
  • Add Salt and Pepper to taste
  • Remove the sauce from the heat and leave to cool
  • In another bowl separate the yolks from the whites
  • Add the yolks into the cheese sauce
  • Whisk the egg whites until stiff
  • Fold a small amount of the egg whites into the sauce, then a little more until you’ve folded all the white in being careful not to mix too much and knock the air out of the mixture
  • Spoon the souffle mix into the ramekins
  • Bake the cheddar souffles for around 20 minutes, until it’s well risen and going brown on top
  • Serve warm
