Golden Cross Goats Cheese Tarts

Method

Preheat oven to 220. Cut the pastry into 6 equal pieces of about 13cm diameter squares. Slice each Golden Cross goat's cheese log into 5cm slices and place each cheese cylinder on a pastry square. Brush with a beaten egg. Pinch together pastry at the edges around the cheese to form a diamond, leaving the surface of the Golden Cross revealed.

Now pop a sprig of rosemary or thyme on top and bake in the oven on a lightly greased baking tray for 15 minutes.

We suggest serving with green leaves and a smear of olive paste or balsamic reduction and a helping of sun-ripened tomatoes.

375g ready-rolled puff pastry
2 Golden Cross logs Buy Cheese
1 free range egg, beaten
sprig of rosemary or thyme

My fave would be a combination of 2 parts Gruyere warm nutty flovar and good melting texture, and 1 part sharp Cheddar well, for that awesome sharp cheddar flovar!And grilled cheese is quick no matter how you cook it. My speediest way is probably:1. Toast 2 slices of bread in the toaster*2. While bread is toasting, slice a few thin slices of cheese. They'll melt faster than one thick slice3. Optional (but not really optional, haha): Butter the toast**4. Build the Sandwich with cheese and toast, butter side in5. Heat in microwave for about 15 seconds or until cheese melts****Pre-toasting the bread speeds up the cooking process**Also optional, but delicious: Use a thin layer of jam (apricot or strawberry is my fave) inside the sandwich along with the butter. Realllly good!***If you don't wanna use the micro, cook the sandwich in the oven or in a pan on the stove until cheese melts.
